Ingredients
4 jalapeño chilies, seeded and chopped
4 scallions, trimmed and chopped
½ bunch cilantro, washed and stems removed (reserve ½ cup for marinade)
3 cloves garlic, peeled and chopped
1 ½ teaspoons salt
½ teaspoon freshly ground black pepper
½ teaspoon ground cumin
¼ cup extra virgin olive oil
¼ cup fresh lime juice
2 tablespoons tequila
Method
In a food processor, combine the jalapeños, scallions, ½ cup of cilantro, garlic, salt, pepper, and cumin. Process until finely chopped.
With the machine running, slowly add the olive oil, lime juice, and tequila. Puree until the mixture forms a bright green paste.
Pour the marinade over the chicken breasts, turning several times to coat them evenly.
Cover and marinate in the refrigerator for 2 hours before grilling.
