Ingredients
2 whole boneless, skinless chicken breasts
1 tablespoon oil
½ medium onion, chopped
1 clove garlic, minced
1 package taco seasoning mix
1 (15 oz) can Del Monte petite cut tomatoes
1 (4 oz) can green chilies
1 can corn with peppers, drained and rinsed
1 (15 oz) can ranch-style beans, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
8 oz green chili salsa (salsa verde)
2 cups chicken broth
1 cup shredded cheddar or Munster cheese, for serving
Sour cream, optional, for serving
Method
In a pot, cook the chicken breasts in water with one bay leaf and some chili powder. (If possible, cook ahead, then cool the chicken in the broth.) Remove chicken, shred or tear into pieces, and set aside. Reserve broth.
In a skillet, sauté the chopped onion and minced garlic in oil until soft; set aside.
Drain and rinse the corn, ranch style beans, and black beans in a colander under cold water.
In a large pot or pan, combine the taco seasoning, petite cut tomatoes, green chilies, drained corn, drained ranch style beans, drained black beans, green chili salsa, chicken broth, cooked shredded chicken, and sautéed onion and garlic.
Cook over medium heat for about 45 minutes, stirring occasionally.
Serve hot, topped with shredded cheese and sour cream if desired. Chips make a great side.
